They retain their taste and when rehydrated can be quite refreshing. I prefer those freeze dried but I have also dehydrated them. What does dehydrate and freeze dry well is sliced up real fruit - like oranges and lemons. Liquids CAN be freeze dried (there is such a thing as freeze dried vinegar for instance - which is a powder) but they are usually done in a spray freeze dryer - which is not yet available for the home user (and may never be). ![]() And unless it was full of pulp (meaning there is some substance to it) the results would likely be much like a thin sheet of dehydrated fruit leather - and not crisp (so storage time would also be limited). Why not? Because sugar just goes really sticky (doesn't freeze dry well), and liquid is what you are trying to remove so if you try to dry stuff that is too liquid-y, you will overload the system with ice on the cylinder (meaning you may have to stop and defrost during the lengthy cycle) and it will take a long time (which can be expensive) to dry. One 'can' freeze dry juice but I would not try it unless it was mostly concentrated, not overly sugary and full of pulp. But if it has a foil internal layer like some shelf stable milk comes in then it should last as long as an aluminum can would. Waxed cardboard isn't going to extend the life like a can will. I just don't know about those cardboard boxes. I will say that in the cans the Jumex should last a very long time if stored in good conditions. Though with modern pasteurization you can make real fruit juice last a very long time if packaged right.
